Kohlrabi & Cabbage Slaw

 

Kohlrabi is a cruciferous vegetable, making it related to cabbage, broccoli, and kale. It is in season during the summer, typically ready for harvest mid-July.

Kohlrabi can be enjoyed cooked or raw. The leaves and stem are great sauteed or stir-fried, while the bulb can be eaten raw or cooked in various ways. This recipe uses the bulb raw. It’s a great way to add vitamin C, fiber, vitamin B6 and potassium to your diet!
