Strawberry Rhubarb Oatmeal Bars

 
 

Strawberries and rhubarb mark the beginning of summer in Northern Michigan! The tart flavor of rhubarb is why it is commonly paired with sweeter fruits, such as strawberries. Rhubarb is in season from May to June, while strawberry season runs from mid to late June.

If you’re making these bars in June, use local strawberries and rhubarb. They’d be great with any other fruit as the seasons change, too. Try them with apples, peaches, pears, raspberries, or blueberries.

This recipe is also easy to adapt to be gluten-free and vegan. Swap the flour for almond flour, and the butter for coconut oil.
