Southwestern Salsa
Southwestern Salsa is the perfect healthy summer snack. It mixes together a variety of colorful fruits and vegetables that you can find at almost any local farmers’ market in mid-August.
It combines sweet and savory, blending traditional salsa ingredients (tomatoes, jalapeños, and onion), with some southwest flavors (cumin, corn, and black beans), and adds fresh fruit for a little sweetness. While we made this recipe with peaches, it works great with a variety of fruit. Nectarines, cherries, mango, plums, and even strawberries have been tested and loved in this recipe.
The tomatoes, jalapeños, onion, peaches, corn, cilantro, and garlic can all be purchased at the Kalkaska Farmers Market.
If you have an abundance of corn and are wondering how to use, store, or preserve it, check out this page from MSU-E!
