Ramp Pesto

Ramps, or wild leeks, are a wild allium native to Northern Michigan that can be harvested in the spring, mainly April and May. They have a potent garlic/onion flavor.

Ramps can be found in woodlands with partial shade and well-drained, rich soil. They usually grow in patches. Ramps have two leaves with a white bulb below ground, and a red-hued stem. The pungent, onion-like smell is always a giveaway that you have found the correct plant.

Please forage responsibly. Only take what you need, and never take an entire patch. Always verify that you have the correct plant before consumption. As with many wild plants, ramps do have poisonous or inedible look-alikes.
